  • Job Description

    ■ POSITION PURPOSE
    ・Total Accountability: Take full ownership of the outlet’s daily operations, ensuring the seamless integration of back-of-house (bakery) and front-of-house (retail) functions.
    ・Strategic Leadership: Drive sales growth and maximize profitability by managing food costs, labor costs, and operational expenses.
    ・Quality Excellence: Uphold the highest standards of Japanese craftsmanship (Wa) in bread production and customer service.
    ・Operational Governance: Oversee the implementation and strict adherence to corporate SOPs, food safety regulations, and brand guidelines.
    ・People Development: Build and lead a high-performing team, fostering a culture of continuous improvement and exceptional hospitality.

    ■ RESPONSIBILITIES
    ・Business Performance & Menu Execution
    P&L Management: Monitor and analyze monthly financial reports; implement strategies to control food costs, minimize wastage, and achieve sales targets.
    Production Oversight: Ensure the bakery team delivers products in strict accordance with defined Japanese baking processes, secret recipes, and health standards.
    Quality Benchmarking: Conduct rigorous final checks on all finished products to ensure taste, texture, and visual presentation meet the brand's premium specifications.

    ・Kitchen & Retail Operations Management
    Supply Chain Management: Finalize and approve all inventory orders for food, ingredients, and retail supplies based on data-driven demand forecasting.
    Inventory Integrity: Audit inventory reports (usage, stock levels, shelf life) to ensure optimal stock rotation and minimal variance.
    Process Optimization: Continuously evaluate workflow for all stations; identify bottlenecks and implement recommendations to improve overall production and service efficiency.
    Facility Management: Ensure the entire outlet (Kitchen & Storefront) and all specialized equipment (ovens, proofers, mixers) are maintained in peak working condition.

    ・Quality Assurance & Compliance
    Service Recovery: Personally lead the investigation and resolution of customer complaints, ensuring a professional "customer-first" outcome.
    Safety & Hygiene Leadership: Enforce 100% compliance with Halal requirements (if applicable), HACCP, and local health and safety regulations.
    Audit Readiness: Ensure the store is always "audit-ready" through regular internal spot checks on cleanliness, sanitation, and staff behavior.
    Risk Mitigation: Take decisive corrective actions to resolve any non-compliant conditions or safety hazards immediately.

    ・Human Capital Leadership
    Team Empowerment: Lead, mentor, and motivate a diverse team of bakers and service staff to maintain high morale and low turnover.
    Strategic Staffing: Plan manpower rosters to maximize productivity while managing labor costs according to peak and off-peak trends.
    Performance Management: Conduct formal performance appraisals, identify high-potential staff for promotion, and manage disciplinary issues in accordance with HR policies.
    Capability Building: Oversee the training curriculum for all staff, ensuring deep product knowledge and mastery of specialized Japanese baking techniques and mastery of specialized Japanese baking techniques.

Qualifications

  • Requirement

    ■ MUST REQUIREMENT
    ・At least 7 years of hands-on experience as service crew or any FOH (Front of House) experience in hospitality or F&B line
    ・At least 3 years of supervisory or management experience in F&B line within retail food environment
    ・Diploma or Degree in Hospitality Management, Culinary Arts, Business Administration, or a related field
    ・Strong ability to lead, mentor, and motivate a diverse team of BOH (Bakers) and FOH (Service) staff
    ・Willing to work on shifts, weekends, and public holidays in accordance with mall operating hours

    ■ ADVANTAGES
    ・Candidate with experience dealing in cafe, bakery operation is highly advantageous
    ・Experience in Japanese baking techniques or handling artisanal bread is highly advantageous
    ・Certified in Food Handling (Sijil Pengendalian Makanan). Strong knowledge of HACCP, Halal requirements, and local health and safety regulations
    ・Solid understanding of P&L (Profit & Loss), food cost management, labor cost optimization, and inventory control
